Decided I was going to try to make my own Pho today. I toasted the spices, charred the onion and ginger under the broiler, and put it all together in a big stock pot with about 4.5 lbs of cut up beef ribs (they're cheaper than oxtails) and around 5 quarts of water. It was smelling pretty good until I open the fish sauce. Admittedly, I haven't done much Asian cooking, and this is my first go with fish sauce. Then I thought, am I really going to put this stuff in there? I sure hope the anise, onion, and ginger aromas balance it out in the end because, right now, it smells like !
